I had a wonderful pasta dish when I was in Paris that had %26quot;lardons%26quot; in it. Is this just bacon cut into pieces? Or is there something else closer that I can find here in the United States? Thanks a lot!

lardons are salted pork that you boil abit to remove some of the salt and fry ever so slowly to get them nice and crispy. I forgot, cut in very small pieces

It sounds like the recipe for pasta Carbonara: lardons, egg yokes, cream and parmesan.
Serve with a side dish of arugula.
