We%26#39;re thinking of staying in an apartment for our stay in Paris this coming October. We%26#39;re looking at apts in the 5th, 6th, or 14th arrondissements (sp??). We%26#39;d like to stay in a place that%26#39;s quiet, so our 1-yr old can sleep peacefully, but still close enough to all the attractions. Are these good choices?

Yes, the choices are good.
But all the three arrondissements do have streets that are noisy and others that are very quiet at night (i.e. almost no traffic, no restos, bars, etc.).
Have a look around for appartments and come back, if you need advice regarding noise level of particular addresses.
Do a search for %26#39;appartments%26#39; here (search box) and you%26#39;ll find some web pages.
